I had some friends over for dinner last weekend, a group that I see quite often. My husband and I were trying to figure out what to serve for dessert. As usual, he was requesting strawberry shortcake (his favorite). I just didnt want to serve it AGAIN.. So, while wandering around the veggie fruit department I happened upon a box of vanilla wafers... Now. maybe the whole world knew this, but I did not.

There was a recipe on the back of the box that had you crunch up all the wafers, mix in a little melted butter and press them in the pan, just like a graham cracker crust. Then you would use the same mixture for the top crust. It was the bomb! It added a whole newflavor combination that I had never had before... But will definately be using a again. It was quick, easy, and wonderful.. all my farvorite things.  This recipe in particular, was a frozen treat using icecream and fruit. But my mind quickly raced to banana cream, lemon cream, strawberry pies. Apple Crisp. The list keeps going on in my mind. I could even use them instead of the shortcake for his favorite dessert! Company loved it and none of them had ever had it before.

So, if you have never tried this before.. give it a whirl.. I am glad I did!

I'll try that out...thankx for the tip! In a house full of teens and their friends, I love to bring out snacks on special occasions. this dessert sounds wonderful.

There are actually 2 recipes right on the box. If you want to try the frozen one and it is not on the box you get, let me know and I will post it here.

I went to Nabiscoworld.com and found all sorts of wonderful recipes using vanilla wafers.

I got the recipe from the keebler vanilla wafers. So, try them too. I will also go to nabisco world myself... Thanks Ratoon!

Also another tip on recipes: I go to Cooks.com whenever I need to find a hard to find recipe.
